Banana Chocolate Coconut Muffins

Ingredients

  • 2 Ripe Bananas

  • 2 ½ Cups Rolled Oats

  • ¾ Cup Shredded Coconut (unsweetened)

  • 1 Cup Greek Yogurt

  • ¼ Cup Ground Flax Seed

  • ¼ Cup Honey

  • ⅓ Cup Chocolate Chips

  • 1 Tsp Baking Powder

  • ½ Tsp Salt

  • 1 Tsp Vanilla

  • 1 Eggs

Makes Appx: 12 Muffins

Total Prep Time: 10 Minutes

Total Cook Time: 10-12 Minutes

  1. Preheat the oven to 350 Degrees F. 

  2. If using frozen bananas, thaw them in the microwave until they can be easily opened and added to a large mixing bowl. 

  3. After adding soft bananas to the mixing bowl, add the egg, honey, greek yogurt, and vanilla. 

  4. Use a hand blender or masher to combine all of the wet ingredients until a goopy texture is formed. 

  5. Add remaining dry ingredients to the mixing bowl and stir to combine. 

  6. Line a muffin tin or spray with cooking spray, and add a little under half a cup scoop to each tin.

  7. Place muffin pan in the oven and allow to bake for 10-12 minutes, the tops should be lightly browned from the coconut, and a toothpick or knife comes out clean.
