Teriyaki Pork on Zucchini Noodles

Ingredients

Slow Cooker Ingredients:

  • 4 Pork Chops

  • ¼ Cup Water

  • 1 Beef Stock Tab

  • ½ Cup Teriyaki Sauce

Stir Fry Ingredients:

  • 3 Stalks of Celery

  • 1 Red Pepper

  • 3-4 Zucchini’s (depending on size)

  • 1 ½ Cups Bean Sprouts

  • 1 White Onion

  • Ginger Dressing (I bought a packaged ginger sauce, but you could make some by mixing 3 Tbsp of sesame oil, 1 Tbsp grated ginger, ½ Tsp Sugar/Honey, 1/2 Tsp Garlic Powder)

Garnish

  • Avocado

  • Spicy Peanuts (peanuts crushed with ½ tsp chili powder and ½ tsp cayenne pepper)

  • ½  Tbsp of Sesame Oil

Note: This recipe uses a slow cooker and a mandolin. You don’t NEED a slow cooker, but a mandolin or zucchini spiralizer is needed to make the zucchini noodles.

Total Cook & Prep Time: 40 minutes (not including slow cooker time), if you are not using a slow cooker, but rather cooking your pork in the oven - cook time should be close to the same, you will just add the pork to the stir fry at the end instead of at the beginning.

Slow Cook time: Low - 6 hours, High - 4 hours

Makes appx: 4-6 servings

  1. If you are slow cooking your pork, put the chops in the slow cooker with the beef stock, water, and teriyaki sauce, and let cook for 4 hours (high) or 6 hours (low) - either overnight or while you are at work.

  2. If you are going to cook the chops in the oven, pre-heat it to 350 degrees Fahrenheit. Place the pork in a baking dish with the beef stock, water, and teriyaki sauce. Place them in the oven and allow to cook for 30 minutes, or until they reach an internal temperature of 145 degrees Fahrenheit.

  3. Place a large skillet on the stove on medium heat, with a tbsp of sesame oil.

  4. If you are coming home to the smell of cooked pork - your slow cooker has done its job. Turn off the cooker, and shred the pork with two forks. Add the shredded pork to the heated skillet and turn it down to low.

  5. Chop up the onion, celery, and red pepper and add to the skillet, along with the ginger sauce. Place a lid on the skillet and allow these vegetables to cook for 15 minutes.

  6. While the vegetables are simmering with the pork and sauce, bust out the mandolin and use the “fry” blade setting to make zucchini noodles.

  7. Add the bean sprouts to the stir fry and replace the lid, allow the sprouts to cook for 5 minutes in the stir fry.

  8. Place the zucchini noodles in a bowl and put them in the microwave for 1 minutes (or until they are warm and slightly tender - might take up to 2:00 minutes - do in 30 second increments to avoid over cooking).

  9. If you cooked the pork chops in the oven, take them, chop them into strips, and add to the stir fry skillet.

  10. All the parts of your stir fry are now ready to be assembled, lay a bed of zucchini noodles in a bowl, and place a few scoops of the teriyaki ginger stir fry on top. Garnish with avocado, spicy peanuts, and sesame oil.
