Broccoli Yam Alfredo

Ingredients

  • 1 Yam

  • 2 Crowns of Broccoli

  • ¼ Cup White Onion (diced)

  • 3 garlic Cloves

  • 1 Tbsp Olive Oil

  • 2-4 Pieces of Bacon

  • ½ Cup Butter

  • ½ Cup Cream

  • 1 Cup Shredded Mozzarella

  • ⅓ Cup Shredded Parmesan

  •  2 Tbsp Almond Flour (to thicken your Alfredo sauce)

Optional: Additional ⅓ Cup Shredded Mozzarella (to top the dish)

Optional: Fresh Thyme

Makes Appx: 2-4 Servings

Total Cook & Prep Time: 30-40 Minutes

  1. Place a frying pan on a medium heat burner. Cut the bacon into smaller pieces first and then add to the pan. 

  2. Place a saucepan on low-medium heat and add the butter. Allow it to melt. 

  3. While bacon begins to fry and butter is melting, finely mince the garlic cloves and add to the butter saucepan, increase the heat slightly to simmer the garlic in the butter bringing to a low bubble.

  4. Keep an eye on the bacon, flipping every few minutes to ensure it doesn’t burn. 

  5. Meanwhile, use a food processor (with a shredding blade) to shred the yam. 

  6. Place a large frying pan (ideally cast iron, as it helps to crisp the yam) on low-medium heat burner. Spread the shredded yam on the cast iron and drizzle on 1 tbsp of olive oil. Allow the yam to cook on the pan (takes approximately 20 minutes, flipping every 5 minutes). 

  7. Once the garlic butter is bubbling add ½ cup of cream. Keep an eye on the heat (it should be at a low bubble), continue to whisk the sauce every few minutes. 

  8. Chop broccoli into small florets and dice the onion, and add it all to the sizzling bacon pan. Stir the veggies in the pan to get the bacon grease coated on the vegetables (adds more flavour and keeps them from sticking to the pan). Allow the broccoli and onion to cook with the bacon (approximately 10-15 minutes). 

  9. Check in on your yam, flipping it so that it doesn’t burn. 

  10. Begin to whisk shredded mozzarella and parmesan into the garlic/butter saucepan, continue to whisk until the cheese is fully melted. Once the cheese has melted into the sauce keep it at a low bubble and allow it to thicken for 5-7 minutes - whisking occasionally. 

  11. If the sauce seems a little too runny after several minutes of simmering, add 2 tbsp of almond flour - whisk to combine and allow to simmer for several more minutes to thicken. 

  12. Once the yam is crispy, broccoli and bacon are fully cooked, and sauce is thickened you are ready to combine it all!

  13. Layer the shredded yam as the “noodle/rice” in a bowl, add a scoop of broccoli, bacon, onion mixture on top, and cover the whole thing with ½ cup of Alfredo sauce. Top the entire dish with more shredded mozzarella and/or parmesan and fresh thyme.
