Fried Egg on Broccoli Patties

Ingredients

  • 2 Crowns of Broccoli

  • 1 Cup Cheddar Cheese (I like old..or extra old)

  • 2 Tbsp Olive Oil

  • 5 Eggs (one for Broccoli Patty mixture, one to fry per serving)

  • 1 Avocado

  • 1 Pack of Bacon (hardwood smoked is my fav)

  • 1/2 Block of Cream Cheese (125g)

  • 1 Tsp Garlic Powder

  • 1 Tsp Chives (dried chives or fresh green onion)

  • Salt and Pepper to taste

Instructions

Total Prep Time & Cook time: 30 minutes

Makes appx 4 servings

  1. Chop broccoli crowns into small florets, and then use a hand chopper (what I used) or a food processor (pulse until in small mostly fine grain).

  2. Heat 1 Tbsp of Olive Oil in a large frying pan (low-medium heat).

  3. Mix 1 egg, shredded cheddar cheese, and 1 Tbsp of olive oil into broccoli mixture.

  4. Form a handful broccoli mixture into small patties, mixture will be a bit wet and goopy because of the egg, it should form together well, but it’s delicate, so place on gently on the frying pan. Allow each patty to cook for 5-7 minutes on each side, flipping around twice (so about 10 minutes per side cooking at a low heat). Fry low and slow to allow the broccoli to cook without burning the egg that’s sealing the mixture. This recipe should make approximately 8-10 patties depending on the size (mine are about 1 inch thick and 2 inches in diameter).

  5. While the patties are cooking (and you are checking in to flip them), cook bacon on a second frying pan - flipping every few minutes to avoid burning. Bacon takes approximately 20 minutes on the pan on low-med heat.

  6. While bacon and patties are cooking, microwave cream cheese in 20 second increments (so it doesn’t explode), until soft to the touch. Mix in garlic powder and chives/green onion, and set aside. Slice up your avocado and also set aside.

  7. When patties and bacon are about five minutes away from being done, heat up a third frying pan with a bit of oil, or make room on your bacon pan for cracking your eggs. I like mine over easy. Egg should sizzle as you crack it onto pan (so ensure it’s hot enough - about 4/5 medium heat). Once the bottom of the egg is white and you can easily slip a spatula underneath - flip the egg over so that the yolk is face down and allow to cook another two minutes.

    Soft or Medium soft egg is best as the yolk adds some moisture to the broccoli patties when it breaks on top of them.

  8. Once broccoli patties are nicely browned on both sides, remove from pan. Remove bacon from pan once it reaches preferred crispiness and pat with paper towel to soak up grease. Remove egg pan from heat.

  9. Place 2-3 broccoli patties on a plate, and cover with cream cheese mixture, place your bacon on next, followed by your egg, and top with sliced avocado, and salt and pepper.

    Note: You can either freeze the broccoli patty mixture (before forming it into patties) and thaw at a later date where you would need to thaw, form into patties, and fry. Or you can form and fry a lot of patties and freeze as many as desired. if following the second option simply remove the cooked frozen patties, allow them to thaw, heat, and eat.
