Absolutely obsessed with this recipe! After seeing a Tik Tok breaking down the Moroccan dish of Zaalouk I knew I had to try - and naturally - add my own twist to it. From the original recipe i added in mushrooms, cayenne pepper, and paprika. I also knew I wanted to pair some bright greens to round out the meal. I made the parsley sauce on a whim and it ended up bringing the entire dish together with a zesty and herby brightness. This is a plant based meal I will be making for years to come - and it’s perfect to entertain guests.
