Souvlaki Burger on Greek Broccoli Salad

Ingredients

  • 4 Souvlaki Pork Burger Patties (you could also just use souvlaki meat from a shish kabob and remove from the stick)

  • 1 Bunch of Kale

  • 1 Head Broccoli

  • 1 English Cucumber

  • 1 Avocado

  • ½ Tbsp Lemon Juice

  • 1 Tbsp Olive Oil

  • 1 Tbsp Parmesan (grated)

  • 4 Tbsp Tzatziki (1 per serving)

  • ½ Tbsp Balsamic Glaze/Reduction (per serving)

Total Cook and Prep Time: 25 minutes

Makes Appx: 4 servings

  1. Place and grease a frying pan on medium heat, placing souvlaki burgers on the pan (or grill) once it’s warm. Flip The patties (or rotate the shish kabobs) once or twice until cooked through, pork should reach an internal temperature of 145 degrees Fahrenheit, appx 20 minutes. 

  2. While the meat is cooking, prepare your greek broccoli salad. Rip up kale (enough for four servings). Place in a large bowl. 

  3. Chop broccoli into florets and add to the kale bowl. Add lemon juice and olive oil and massage into the greens mixture. Dole this mixture out into the number of servings you require (I use it for appx 4 servings). 

  4. Slice up cucumber and avocado and add to each serving bowl. 

  5. When burger patties are close to done, shred parmesan on top so that it melts.

  6. Place one patty (or shish kabob) onto each serving bowl. Top with 1 tbsp of tzatziki and drizzle on balsamic glaze and fresh ground pepper.
